Our Story

We did not set out to create another beverage. We set out to rethink what hydration could be.

For me, hydration and wellness have always been about purity, about knowing exactly what I am putting into my body and why it matters. It should be simple. We need water, and we need water that is clean, honest, and true to its source.

After moving to the United States, I began to notice how complicated hydration had become, flavored, fortified, over engineered. What was once essential started to feel processed, layered, and distant from nature. It made me question why something so fundamental had drifted so far from its origin.

I wanted a different path. One that begins at the source. One that embraces simplicity, transparency, and intention in every step.

Our Process

How birch sap is collected

The Tap
Step 01

The Tap

Each spring, a small incision is made into the trunk of mature birch trees, allowing the sap to flow naturally into collection vessels without harming the tree.

The Flow

The Flow

As the weather turns warm, sap begins to rise through the tree, carrying minerals and over 200 bioactive compounds drawn from deep within the soil. The starch stored in the roots naturally converts into the subtle sugars found in birch sap.

The Gather

The Gather

Birch sap can only be collected for a brief window of about two weeks each spring. It begins subtly sweet, gradually becoming more tangy as the season progresses. As a result, there may be slight natural variations in taste between each harvest and each bottle. Each tree yields roughly four to five bottles of OOZ.

The collected birch sap is gathered in buckets and promptly transported to the facility, where it is gently filtered, pasteurized, and bottled in glass. This light heat process removes naturally occurring bacteria and microorganisms, allowing OOZ to remain shelf stable for up to one year while preserving its clean, natural profile.
